Who doesn’t like a gooey, oozey triple cream cheese? April’s cheese of the month is a sure-fire crowd pleaser.
Made amongst the vineyards of Champagne, Petit Delice des Cremiers is a rich, triple cream cow’s milk cheese that although full of character, is subtle and delicate.
Made with whole milk and enriched with fresh cream, it has a smooth, white bloomy rind and a velvety, melting texture that gradually becomes softer with age (the cheese can be left in its wooden box to mature).
Smelling faintly of mushrooms and cream, the melt-in-the-mouth cheese tastes sweet and fruity with a salty tang on the finish. It’s at its best when the white rind has slightly discoloured and the inside has become gooey and luscious.
The cheese is packaged in a wooden box – known as a cellar or cave – developed by the master cheesemaker to ensure that the cheese is well-preserved and prolongs the ripening process.
Pair it with sparkling wine, rose or chardonnay.
